About Nick and Sarah

Nick and Sarah Suarez are co-owners of Gaskins Restaurant in Germantown, NY. Nick is the head chef and Sarah runs the front of house. For the past decade, both Sarah and Nick have worked at many of NYC’s best restaurants, including Diner, Marlow & Sons, Romans, Franny’s, Gramercy Tavern and The Modern.

You should definitely try heirloom apples from Montgomery Place Orchards. They have an incredible selection of apples and they take care and pride in everything they grow and sell. They have samples to try and one of the lovely ladies of MPO will likely sway you towards a variety you’ve never heard of like Pitmaston Pine Apple. Don’t miss their cider or jam and definitely pick up a decorative pumpkin in the fall. The uglier the better.

You can’t go wrong with our grass-fed burger. We make the sesame seed bun and I think it's squishy and perfect. The ground beef is from Kinderhook Farm. Lee & Georgia Ranney at Kinderhook were two of our first friends in Columbia County and their warmth and generosity helped sway us to make the move to the Hudson Valley. People also love our roasted beet salad for its simplicity. It's roasted beets served with creme fraiche, toasted pistachios and red onions. We've converted quite a few beet haters with this one.

We come here to buy Sparrowbush Farm’s polenta, cornmeal or popcorn. It's is an ideal edible souvenir. They grow the corn and freshly mill the polenta and cornmeal, making it the most perfect version you’ve ever tried. We use their polenta from our lemon polenta cake and the cornmeal in our fried chicken. They are at the Hudson Farmer’s Market every Saturday.
