Restaurateur James Mallios and Kylie Monagan recently opened Calissa, a new Greek restaurant in Water Mill. The inspiration comes from James' summers spent in Mykonos. This is James' third restaurant since he has opened Amali and Amali Mou in Manhattan. Before opening Calissa with James, Kylie was responsible for the operations of Amali and Amali Mou. While Kylie has been busy focusing on bringing the Greek Isles to the Hamptons, she has also made time to explore the eastern end of Long Island. This is the first in a series of her guides to the Hamptons. We start with her perfect day in Montauk.

After a long night, nothing beats a breakfast burrito at Joni’s. Eat at one of the picnic tables outside or walk a block to the beach. Joni's also has an excellent smoothie list with extensive additions like goji and maca.

After breakfast, grab a beer flight and nab one of the coveted tables on the outside patio. The bar gets busy shortly after opening, so make sure to arrive early. The seafood joint next door will let beer drinkers use their tables -- just put in a couple orders of calamari and lobster salad.

3pm at Sloppy Tuna

Just a few blocks from Montauk Brewing Co. and right on the beach, Sloppy Tuna is a classic bi-level day-drinking spot. Catch live reggae music on the back patio or enjoy the ocean view in the front. Grab a bucket of Coronas or a chum bucket (rum punch is a plastic bucket). Nothing is more Montauk.

This rustic, Mediterranean type spot delights with its views of the ocean and handwritten menu. Take a stroll along the water while waiting for simple, but eclectic dishes like harissa chicken and beets with pomegranate.

This may not be the classiest bar in the Hamptons, but they pour a strong drink and there's nowhere better to dance. The 4am last call is just a suggestion for those wishing to walk home on the beach and watch the sun rise.
