Pastry Chef Rachel Binder of Padoca Bakery

Rachel Binder was born in Toronto and raised in Jerusalem. She honed her craft working at chef Peter Hoffman's Savoy and Danny Meyer's Union Square Cafe, Tabla, and Maialino in New York City. At Padoca Bakery, she does unqiue twists on classic baked items like the South American Romeo & Juliet Babka, which is made with guava and cheese and Empadinhas which are miniature Brazilian pot pies.

My Philosophy: "There is nothing like hearing someone say, 'This tastes just like my mother's or grandmother's and seeing the smile on their face. My goal is to bring happiness to people through food -- that's really what it’s all about."

Don't Miss: "The Pao de Queijo (a traditional Brazilian cheese bread). I worked really hard and tested so many recipes before I got it just right."
