Janine Booth and Jeff McInnis are co-chefs at Root & Bone in New York City. Booth hails from Perth, Australia and McInnis was raised in Niceville, Florida. They first worked together at restaurant Gigi in Miami, before McInnis opened Yardbird Southern Table & Bar in Miami's South Beach. In 2014, Jeff and Janine opened Root & Bone, bringing southern fare to the northeast. Last winter, the pair returned to Miami to open Sarsaparilla Club, where they serve American dim sum and this fall, they will open their third restaurant, Stiltsville Fish Club, in Miami's Sunset Harbor neighborhood.

Sit at the chef's counter and order the tasting menu. The kitchen is a performance art show and the food is some of the best in the country. It is reasonably priced fine dining, but without pretentious service. It is consistently ranked best in town.
