Weaver is the executive chef of Butcher & Bee in Nashville, TN and the The Daily and Butcher & Bee in Charleston. He has cooked his way around the country, including working at Irving Street Kitchen in Portland, OR, and Superba Snack Bar in Venice Beach, CA.

Menu highlights Not to Be Missed

Whipped Feta with Fermented Honey
It is our best selling dish by far, it's like Middle Eastern queso. Avocado crispy rice, Serrano vin, peanuts - so many flavors and textures, and it's vegan.

Seared Abalone Mushroom with Spiced Labneh and Green Tomato Jam
It's large mushrooms that we treat like a steak. It's a stunning dish when it comes out.

Fried Chicken
We toss our thighs with 'nduja (an Italian spicy, spreadable pork salumi) butter and a spice blend we call Tennessee Togarashi.
