Massimo De Francesca is the executive chef for the Kimpton Seafire Resort + Spa in Grand Cayman. Since 2008, he has worked with Kimpton Hotels at Domaso Trattoria Moderna in Arlington, VA; at Nios in New York City; Taggia at FireSky Resort and Spa in Scottsdale, AZ; and SaltRock Kitchen at Kimpton’s Amara Resort and Spa in Sedona, AZ. Previously, he worked in Toronto, in Italy, and at the Westin Casuarina Resort in Grand Cayman.

My Tip: The daily ceviche is a must try at our Mexican restaurant. It is prepared with fresh local island fish marinated in classic Mexican / Peruvian / Latin style and topped with avocado. It is served with crispy root chips.

My Tip: This is our signature Spanish restaurant, so I recommend trying a portion (or two) of hand-sliced Iberico Jamon and the Olives Evolution. The olive dish is an ode to Ferran Adria's famous spherical olives served with marinated Spanish olives.
