About Chef Massimo De Francesca
Massimo De Francesca is the executive chef for the Kimpton Seafire Resort + Spa in Grand Cayman. Since 2008, he has worked with Kimpton Hotels at Domaso Trattoria Moderna in Arlington, VA; at Nios in New York City; Taggia at FireSky Resort and Spa in Scottsdale, AZ; and SaltRock Kitchen at Kimpton’s Amara Resort and Spa in Sedona, AZ. Previously, he worked in Toronto, in Italy, and at the Westin Casuarina Resort in Grand Cayman.
My Tip: The daily ceviche is a must try at our Mexican restaurant. It is prepared with fresh local island fish marinated in classic Mexican / Peruvian / Latin style and topped with avocado. It is served with crispy root chips.
My Tip: Influenced by Mediterranean and Caribbean cuisines, the local snapper is our most popular dish. It is cooked crispy-skin on the plancha, served atop roasted caponata, topped with pine nuts and za'atar salsa verde.
My Tip: This is our signature Spanish restaurant, so I recommend trying a portion (or two) of hand-sliced Iberico Jamon and the Olives Evolution. The olive dish is an ode to Ferran Adria's famous spherical olives served with marinated Spanish olives.

Off The Beaten Track
I like heading up to West Bay and stopping into Heritage Kitchen. It's off the main road, so you'd never know it exists.
My Tip: They make amazing fried local fish topped with escovitch sauce.

My Tip: Stop to see the blow holes. They're incredible.

Sunset & Beach Bars
This is my favorite place to watch the sunset. It's located in South Sound and it's right on the water with great views.
My Tip: I either enjoy a crispy Caybrew or White Tip beers [brewed locally] or a cocktail.

This is a cool spot to hang out at. You'll find good tunes, good food, and the beach is fantastic.
My Tip: Make sure to get there early and bring sunscreen.

My Tip: The cocktails are excellent.

They serve simple herb roasted chicken with delicious sides and salads and it's always consistent.
My Tip: They have the best brownie I have ever tried.

It's a beautiful waterfront restaurant that's been here for many years.
My Tip: Come here for elegant Caribbean food.
